Tastebuds Tuesday – Sweet Potato Banana Waffles – Dieting Deliciously

Happy Tuesday/Wednesday everyone ( yes, today is Wednesday, I blogged on my website but had to make it to the gym before I ran out of time) ! Today is going to be the beginning of my DD countdown IG-postofficially. Remember the cookbook I mentioned yesterday? Well, it has been a fun, yet productive project. The only thing I can complain about are the damn dishes! Holy cow, I have been able to dodge pots and pans by using disposable pans; paper plates and plastic utensils ( since I eat 6 times a day and prep my food weekly).  Ladies and gentleman, there is no way around being a Messy Crocker ( reference Betty Crocker, SHADAP  I am funny)  when you’re about to create a masterpiece in the kitchen. So please allow me to introduce to you my sweet potato banana waffles. Trust me it tastes better than it looks; and yes they look pretty damn good. In addition, the house smells like heaven. Unlike the constant flounder smell you get at my house once a week – since I have to eat white fish to lose this damn body fat – . Not to get off topic, by the way when I create these dishes ( during my competition season) I can’t eat them.  Yikes, you read right! In fact, I learned how to cook without ever measuring a thing. I simply use my sense of smell and at time my taste buds. After a while, I just know exactly what to do and how to reverse a mishap ( as long as I don’t set the house on fire there will always be hope)

Now let’s get down to whats really matters here; the recipe for  these SWEET MOTHER OF GOD BANANA POTATO WAFFLES !

PREP TIME: 30 MINS

Ingredients:

-Boiled/Mashed

2+ sweet potatoes .

– 1c refined Oats

-1 handful oats

– 1 mashed banana

-1c egg whites

-1/2c Almond Milk

-1 cap Vanilla Extract

-1 cap Banana Extract

-1/2c Gluten Free Baking Mix.

– 2tbsp crushed Pecan Nuts.

– Coconut Flakes.

-The night before, boil Sweet Potatoes for 30 minutes  until soft in the core.

– Let them cool off before peeling ( if you’re a habitual last minute individual.

– begin to add you spices/ingredients.

​​- Mash 1 whole banana into the mashed potatoes until softens. Then into a large bowl for mixing.

– Add your GF Baking mix

-Add  your Almond milk

-Add your egg whites

Add your refined Oats/whole Oats.

Add Vanilla/Banana

-Begin Mixing with a mixer until softens into a thick paste.

-Begin to spread batter into waffle maker.

– sprinkle coconut flakes

-sprinkle Pecan nuts.

-spray pam spray on mixture.

-close lid shut for 1 minute or until it’s solid enough to enjoy!

Topping

TAKE LEFT OVER MASHED SWEET

POTATOES TO MAKE A SWEET TOPING

 BY ADDING PUMPKIN

SPICE, BANANA &

VANILLA EXTRACT WITH A DASH OF

CINNAMON POWDER.

MIX UNTIL ALMOST LIQUIFIED.

THEN, ADD ON TOP OF

THE WAFFLES AS A SPREADER.
